Brewing guide
Sencha is best brewed for about 1-2 minutes. A longer infusion releases fuller flavour, but it can become bitter in taste. Make sure the water is below boiling point (about 75°C) to maintain the maximum benefit of the herbs.
Try pouring a dash of cold water over the herbs before adding boiling water. This will ‘wake’ the herbs and they won’t be burnt by the hot water. We recommend 1 teaspoon of herbs per serve (250ml).
